Banana pancakes

What to do with overripe bananas? Brown bananas remain edible but you won’t get any pleasure if you eat them. And it’s not right to throw away the food. So let’s make tasty breakfast out of not tasty bananas! You may also use ripe (yellow) bananas, if you wish.

Ingredients:

  • 2 big ripe or overripe bananas (if you have small ones, use more)
  • 2 eggs
  • 0,5 tsp of cinnamon
  • 0,5 tsp of vanilla sugar or a pinch of vanilla
  • Oil for frying

Optional:

  • Liquid jam (preferably a jam with a slightly sour taste)

Instructions

Mash bananas with a fork. Add eggs and mix. Add cinnamon and vanilla and mix everything one more time.

Add some oil to a frying pan. Start frying at medium heat. Pancakes should be small (up to 8 cm). Otherwise it would be hard to turn them without breaking. Add oil during cooking if the pan becomes too dry.

You may serve banana pancakes like this or top it with some liquid jam. A slightly sour jam suits better. There is plum liquid jam on the picture above. But don’t put too much jam, because pancakes are sweet enough.
