Pasta with creamy mushroom sauce, easy & quick

Fettuccine or spaghetti with creamy mushroom sauce is one of favorite pasta dishes around the world; let’s cook it easy and quick in just one pan! I don’t like al dente, if you do – reduce cooking time in step 2 – don’t add 2 min.

From this amount of ingredients you will get 2 portions (or 1 huge, see the picture below). I remind you that we use only 1 pan (pot, whatever you have) every step means that you should add new ingredients to previous ones.

Instructions

Step 1:

  • 20-30 g of onion
  • 150-200 g of fresh or frozen champignons (or any mushrooms up to your taste)

Mince onion and cut mushrooms. Add some oil to a pan and fry until mushrooms are golden-brown. Avoid undercooking – mushrooms can absorb water later and lose their taste and structure.

Step 2:

  • 100 g of spaghetti or fettuccine (any long pasta)
  • 220 ml of water
  • 0,25 tsp (preferably – freshly) grounded black pepper
  • 0,5 tsp of salt

Add, cover the pan and bring to a boil. Stir, reduce the heat to minimum and cover the pan. Cooking time – see the package of pasta +2 min.

Step 3:

  • 100 ml of cream, 20%
  • (optional) some sliced cheese, ~50 g, but it’s not necessary, if you want to enjoy mushroom taste

Uncover the pan, add cream, stir and cook at medium-low heat until cream makes bubbles. If the sauce seems to be too liquid – cook 1 more minute, constantly stirring, to dry out the excess water. Note: when you will serve pasta, creamy mushroom sauce will thicken due to decrease of temperature.

What should I do if…

Q: …I have already fried mushrooms but without onion?

A: Exclude mushrooms from step 1 and add them 1-2 min. before step 3. Make corrections to the amount of salt and pepper. Also you will need less fried mushrooms, ~80-100 g.

A: Exclude step 1 and add them 1-2 min. before step 3. Make corrections to the amount of salt and pepper. Also you will need less fried mushrooms, ~80-100 g.
